Red Maple, new bar and restaurant, plans Japanese cuisine in Milwaukee

A new, upcoming bar and restaurant in the South Side of Milwaukee will offer Japanese beer, cocktails and dining with a modern twist.

Red Maple, at 100 W Maple St., was once occupied by Ollie’s Bar.

The space will be given new life by owners Robin Koutecky, who also owns Clementine Bar, and service industry veteran Janet Boettner.

Boettner, whose mother is Japanese, said the restaurant will feature “all the fun things about Japan.”

“It’s going to be pretty colorful, and think Godzilla,” Boettner said. “It’s going to be fun, eclectic, hip and just a great place to have fun.”

Their plan is to open the bar with a variety of Japanese beers, cocktails and more this summer.

In the fall, Boettner hopes to add a menu featuring Japanese plates that are hard to find elsewhere in Milwaukee.

“It’s going to be different. No ramen, no sushi,” Boettner said. “I grew up with my mom’s kitchen built into my dad’s side, and it’s going to be a combination of the food that I loved, and I wanted to showcase it.”

Boettner said she plans to make plates like Japanese curry, Omurice or omelette rice, and other Japanese comfort food.
